Champagne

Champagne, the most famous sparkling wine in the world, originates from the most northerly wine region of France. It is strictly regulated to maintain it's high quality status, exclusively using the term Champagne or 'Méthode Champenoise', the secondary fermentation in the bottle to create bubbles. Chardonnay, Pinot Noir and Pinot Meunier are the grapes permitted and used in varying percentages by different maisons. For example, 'Blanc de Blancs' is made exclusively from the white Chardonnay grape. Most Champagnes are a blend of vintages (non vintage) with Vintage and Prestige Cuvées, such as Dom Pérignon and Cristal, being sourced from one single quality year.
